Raising, figs and stewed dates from the PX sherry cask influence. A base of sweet malt, marzipan sponge cake and a splendid Dunville’s candied orange grace note. Apricots, grapefruit and toasted almonds open up to fresh green cooking apples. Warming to apple tarte tatin, lightly spiced calvados caramel creme and dark fruit compote.
